Ingredients (view qty in metric system instead)
1 medium onion, thinly sliced 2 tbsp. olive oil 2 tbsp. minced garlic 1 1/2 pounds roma tomatoes, seeded and chopped 2 tsp. minced fresh rosemary 4 russet potatoes, thinly sliced 1/2 tsp. salt 1/2 tsp. pepper 1 cup grated swiss cheese
Directions
Preheat oven to 450 degrees. Coat a large casserole dish with nonstick spray. Cook onion with oil in a skillet until tender. Add garlic and cook 1 minute. Add tomatoes and rosemary and cook until liquid is mostly evaporated. Layer 1/2 of the sliced potatoes into casserole. Season with salt and pepper. Top potatoes with 1/2 of tomato mixture and 1/2 of cheese. Repeat layers of potatoes, tomatoes and cheese. Cover with foil and bake 30 minutes. Uncover and bake 15 minutes. Let stand 5 minutes before slicing.
Serves 6 to 8.
