Ingredients (view qty in metric system instead)
Dressing: 1/3 cup olive oil 5 tbsp. whole grain Dijon mustard 3 tbsp. yellow mustard seeds 3 tbsp. chopped fresh dill weed 2 tbsp. white wine vinegar 1/2 tsp. salt 1/4 tsp. pepper
Salad: 1 1/2 pounds medium red potatoes, halved crosswise and cut into wedges 1/2 cup chopped red onion
Directions
For Dressing: Whisk together olive oil, Dijon, mustard seed, dill, vinegar, salt and pepper in a small bowl.
For Potatoes: Place potatoes in a medium saucepan with lightly salted water to cover. Boil about 10 minutes until potatoes are just tender. Drain well and transfer to a large bowl. Cool potatoes to room temperature. Add dressing and red onion and toss to coat.
Serves 4 to 6.
