Ingredients (view qty in metric system instead)
3 large potatoes, baked and cooled 1 large egg 2 tbsp. Cream of Wheat cereal 1 1/2 tsp. minced onion 1 1/2 tsp. salt 1/4 tsp. pepper pinch nutmeg 2 tbsp. cold butter, cubed 1 cup all purpose flour 1/2 cup butter, softened
Directions
Cut potatoes in half and scoop out insides into a large bowl and mash. Add egg, Cream of Wheat, onion, salt, pepper and nutmeg. In a separate bowl, cut cold butter into flour until it forms a coarse meal. Add to potato mixture and stir until evenly moistened. Turn dough out onto a floured surface and shape into an 18 inch log. Cut into 1 inch pieces. Form each piece into a 2 inch dumpling. Boil in a large pan of boiling salted water about 5 minutes, stirring frequently to prevent sticking. Drain, toss with softened butter and serve.
Makes about 18 dumplings.
