Ingredients (view qty in metric system instead)
1/2 cup apple juice 1/4 cup bourbon 1 3/4 cups brown sugar 1 cup pecans, toasted and ground 1/4 cup light molasses 3 tbsp. dry mustard 6 portions pork loin, 6 ounces each 1 tsp. salt 1 tsp. pepper
Directions
combine apple juice and bourbon and boil until reduced to 1/3 cup. Stir together sugar, pecans, molasses and mustard. Stir in bourbon mixture to form a thick glaze. Season pork with salt and pepper and sear on all sides in a skillet. Place on a cookie sheet and roast at 400 degrees 12 to 15 minutes until thermometer inserted in center of pork reads 155 degrees. Brush pork thickly with glaze and roast 5 minutes. Let stand several minutes before slicing.
Serves 6.
