Ingredients (view qty in metric system instead)
1 pound pork tenderloin 1/8 tsp. black pepper 2 tsp. olive oil 1/2 cup crumbled bleu cheese 3 tbsp. finely snipped fresh chives 1 tbsp. plain dry breadcrumbs
Directions
Preheat oven to 425 degrees. Cut tenderloin into 1 inch thick slices. Flatten to 3/4 inches thick. Sprinkle with pepper. Heat oil in a nonstick skillet. And pork and brown 1 to 2 minutes per side. Transfer pork to a foil covered baking sheet. Mix together bleu cheese, chives and breadcrumbs, crumbling cheese finely. Sprinkle bleu cheese mixture evenly over pork. Bake 8 to 10 minutes or until meat thermometer registers 155 degrees.
Serves 4.
