Ingredients (view qty in metric system instead)
2-1Lb. Whole Pork Tenderloin 1/2 tsp. salt 1/4 tsp. ground pepper 1/4 tsp. cinnamon 1/4 tsp. cardamom, ground 1/4 tsp. cumin 2tsp. olive oil 2 medium pears, cored, peeled and diced
Directions
Preheat oven to 450 degrees. Combine salt, pepper, cinnamon, cardamom and cumin in a small bowl. Place tenderloins side by side in a roasting pan. Rub spice mixture over pork and drizzle with oil. Roast for 10 minutes, turn pork over and continue roasting another 10 minutes or until internal temperature is 140 degrees. Remove pork to a serving platter. Pour off fat in a pan and place over medium-high heat. Add pears and cook stirring until pears are tender, about 10 minutes. Slice pork and arrange over pear sauce.
