Ingredients (view qty in metric system instead)
2 1/4 pound pork tenderloin, trimmed, and sliced into 18 pieces 2 cups all purpose flour 1 tsp. salt 1 tsp. pepper 3 tbsp. vegetable oil 1/2 cup peach brandy 1 cup beef broth 1 cup cold butter, diced 3 unpeeled peaches, cut into wedges pinch cinnamon pinch allspice pinch nutmeg
Directions
Mix together flour, salt and pepper. Dredge pork in flour mixture to coat. Heat oil in skillet. Add pork and brown on both sides. Reserve. Remove skillet from heat. Pour off fat and add brandy and broth. Reduce by 2/3. Remove from heat and whisk in 2 tbsp. butter. Return to low heat and whisk in rest of butter 1 tbsp. at a time. Add peaches and heat through. Stir in spices. Serve sauce over pork.
Serves 6.
