Pork Tenderloin with Mushrooms Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
1 3/4 lbs. pork tenderloin
1-1 1/2 tsp. salt
1/2 tsp. herb salt
Dash of black pepper
3 Tbs. fine bread crumbs
3 Tbs. grated Parmesan cheese
2 potatoes
2 Tbs. butter
2 Tbs. chopped parsley

Mushroom Sauce

1/2 lb mushrooms
1 Tbs. butter
1 1/4 cups whipping cream
1 egg yolk
1/3 cup white wine
Dash of salt
Dash of pepper
Dash of garlic powder

Directions
Peel and slice potatoes. Boil in lightly salted water until soft. Drain, keep warm.
Mushroom sauce-
clean and slice mushrooms. Quickly saute in butter until lightly brown. Add cream, a little at a time. Cook over medium-low heat until thickened.
Beat egg yolk and wine together. Add to mushrooms. Season to taste. Heat but do not boil or sauce will curdle. Set aside.
Slice meat. Combine salt, herb salt, pepper, bread crumbs and cheese. Dip meat slices in mixture. In a skillet, pan fry meat in butter over medium-high heat until brown on both sides and meat is cooked to your liking. Place hot potatoe slice on hot serving dish, add tenderloin slices and mushroom sauce. Sprinkle with parsley and serve.
