Ingredients (view qty in metric system instead)
1 1/2 to 2 pounds pork tenderloin 4 tbsp. sugar 4 tbsp. soy sauce 1 1/2 tsp. ground cinnamon 2 tbsp. Pepsi-Cola 1 tsp. ground ginger 2 tsp. dry mustard 2 tbsp. lemon juice
Directions
Preheat oven to 400 degrees. Place pork in a shallow roasting pan. Combine sugar, soy sauce, cinnamon, Pepsi, ginger, dry mustard and lemon juice in a small bowl. Pour cinnamon mixture over pork and roast 15 minutes. Reduce oven to 350 degrees. Roast pork an additional 35 to 40 minutes, basting occasionally, until pork reaches 155 degrees. Remove pork to a platter and tent with foil. Let stand 10 minutes before slicing. Meanwhile, Strain pan juices into a small saucepan. Boil until syrupy. Drizzle over pork just before serving.
Serves 6.
