Ingredients (view qty in metric system instead)
Sauce: 1/2 cup minced dried apricots 1 cup diced dried apples 1/4 cup brandy 3 tbsp. butter 1/2 cup minced onion 1 clove garlic, peeled and minced 1/4 cup marsala 2 cups chicken broth peel from 1 orange
Pork: 12 boneless pork loin chops 2 tbsp. olive oil 1/4 cup marsala
Directions
For Sauce: Combine apricots, apples, brandy, butter, onion, garlic, marsala, broth and orange peel in a large saucepan. Boil gently until reduced by half, stirring occasionally.
For Pork: Heat oil in a large skillet. Add pork chops and cook about 4 minutes per side until just done. Transfer chops to a platter. Add marsala to the hot skillet to deglaze. Pour pan glaze over chops then spoon fruit sauce over. Serve immediately.
Serves 12.
