Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil, divided 1 large shallot, minced 4 large fresh mushrooms, thinly sliced 1/2 cup dry white wine 1/4 cup heavy or whipping cream 1/8 tsp. dried thyme 1/4 tsp. salt 1/4 tsp. pepper 1 tsp. coarse-grained mustard four 1/2 inch thick pork chops
Directions
Heat 1 tbsp. oil in a small saucepan. Add shallot and cook until softened, about 3 to 5 minutes. Add mushrooms and cook, stirring frequently, until liquid is evaporated. Add wine and boil until reduced to 2 tbsp. Stir in cream, thyme, salt and pepper and simmer until sauce is thickened. Heat remaining 1 tbsp. oil in a large skillet. Add pork chops and cook until golden and cooked through, about 3 minutes per side. Serve with sauce.
Serves 2.
