Ingredients (view qty in metric system instead)
1/2 cup chopped onion 2 tbsp. vegetable oil, divided 1 cup sliced fresh mushrooms 1/2 cup dry white wine 1/4 cup heavy or whipping cream 1/8 tsp. crumbled dried thyme 1 tbsp. coarse grained mustard four 1/2 inch thick loin or rib pork chops 1/2 tsp. salt 1/2 tsp. pepper
Directions
Heat 1 tbsp. oil in a small saucepan. Add onion and cook over medium heat, stirring frequently, until tender. Add mushrooms and cook until tender and liquid is evaporated. Add wine and boil until reduced to 2 tbsp. Stir in cream, thyme and mustard. Simmer sauce until slightly thickened, about 2 minutes. Heat remaining 1 tbsp. oil in a large skillet. Season pork with salt and pepper. Add pork chops and cook over medium-high heat until golden and cooked through, about 3 minutes per side. Plate pork chops and spoon sauce over.
Serves 2 to 4.
