Ingredients (view qty in metric system instead)
3 tbsp. olive oil 1 1/3 cups rye bread crumbs 1 tsp. minced garlic 1/2 tsp. dry thyme 1/2 tsp. salt 1/4 tsp. pepper 4 pork chops, about 8 ounces each 2 tbsp. dijon mustard
Directions
Preheat oven to 425 degrees. Saute\' bread crumbs, garlic, thyme, salt and pepper with 2 tbsp. oil in a skillet until crumbs are golden brown. Reserve. Wipe skillet clean and add 1 tbsp. olive oil. Add chops and brown on both sides. Transfer to a baking pan and coat tops of chops with mustard. Sprinkle breadcrumb mixture over and roast 5 to 8 minutes, until chops are cooked through.
Serves 4.
