Ingredients (view qty in metric system instead)
Sauce: 3/4 cup chicken broth 1/2 cup fresh brewed coffee 1/2 cup catsup 1/2 cup brown sugar 1/3 cup grated onion 1/4 cup bourbon 1/4 cup apple cider vinegar 2 tbsp. creole mustard 1 tbsp. worcestershire sauce 1 1/2 tsp. minced canned chipotle chilies with sauce 3 cloves garlic, minced 1/4 tsp. salt 1 tbsp. vegetable oil
Pork Chops: 1 tbsp. vegetable oil four 10 ounce pork chops
Directions
For Sauce: Combine broth, coffee, catsup, sugar, onion, bourbon, vinegar, mustard, worcestershire, chipotles with sauce, garlic, salt and oil in a large saucepan. Heat to a simmer. Simmer 5 minutes, stirring occasionally. Remove sauce from heat.
For Pork: Preheat oven to 400 degrees. Heat oil in a large skillet. Add pork chops and brown on both sides. Transfer pork to a large baking pan and pour half of sauce over. Bake pork 15 minutes until cooked through. Meanwhile, boil remaining sauce until thickened, about 5 minutes, stirring occasionally. Serve pork with sauce.
Serves 4.
