Ingredients (view qty in metric system instead)
8 dried apricot halves, cut into 1/4 inch wide slices 1/4 cup water 1/4 cup honey 4 pork chops, about 5 ounces each 1/4 tsp. salt 1/4 tsp. pepper 1/2 cup all purpose flour 2 tbsp. butter or margarine 16 pecan halves 2 tbsp. brandy
Directions
Combine honey and water in a small saucepan. Heat to a boil. Add slivered apricots and boil 1 minute. Remove from heat, cover and let stand 1 hour. Season chops with salt and pepper. Place flour in a shallow dish or pie plate. Dredge chops in flour, 1 at a time, shaking off excess. Melt butter or margarine in a large skillet. Add pork chops to skillet and arrange in a single layer. Sprinkle pecans over. Brown pork about 5 minutes per side. Add apricot mixture and brandy and bring to a boil. Reduce heat to low. Cover and simmer about 10 minutes until chops are cooked through and tender.
Serves 4.
