Ingredients (view qty in metric system instead)
16 ounce can chopped tomatoes with juices 2 tbsp. vegetable oil 6 pork chops, about 4 to 5 ounces each 1 can golden mushroom soup 1/3 cup chopped onion 2 tsp. yellow mustard 1/4 tsp. pepper 1/2 cup sliced dill pickles 3 cups hot cooked rice 2 tbsp. chopped fresh parsley
Directions
Drain tomatoes and reserve 1/2 cup juice. Heat oil in a large skillet. Add chops and brown on both sides. Drain fat from skillet. Add soup, reserved tomato juices, onion, mustard and pepper. Cover and simmer 30 minutes until chops are cooked through, stirring occasionally. Add tomatoes and pickles and heat through. Stir together rice and parsley. Serve chops over rice.
Serves 4 to 6.
