Ingredients (view qty in metric system instead)
3 pound pork butt, cut into 1 inch pieces 1/2 tsp. salt 1/2 tsp. pepper 3 tbsp. all purpose flour 3 tbsp. vegetable oil 3 cups chopped onions 6 cloves garlic, peeled and chopped 1 tbsp. dried oregano 1 tbsp. ground cumin 5 cups chicken broth 1 1/2 cups charred, peeled, seeded, chopped poblano chilies 14 ounces canned diced tomatoes in juices
Directions
Place pork in a large bowl and season with salt and pepper. Add flour and toss to coat. Heat oil in a large pot. Add pork and brown on all sides. Transfer pork to a large bowl. Add onions and cook, stirring frequently, until tender, about 6 minutes. Add garlic, oregano and cumin. Cook, stirring, 2 minutes. Return pork to pot along with broth, chilies and tomatoes with juices. Bring to a boil. Reduce heat and simmer about 2 hours until pork is very tender and chili is thickened.
Serves 6.
