Ingredients (view qty in metric system instead)
2 cups all purpose flour 1/4 cup grated parmesan cheese 1 tbsp. sugar 2 tsp. baking powder 1/2 tsp. baking soda 1/4 tsp. cayenne pepper 1/4 cup chopped pimiento-stuffed green olives 1/4 cup minced oil-packed sun-dried tomatoes, drained 1 1/4 tsp. fennel seed 1 medium clove garlic, minced 1/4 tsp. dried oregano 2 large eggs 1/2 cup olive oil 1/3 cup milk 1/3 cup sour cream
Directions
Preheat oven to 400 degrees. Grease a 12 cup muffin pan or line with paper cupcake cups. Mix together flour, parmesan, sugar, baking powder, baking soda and cayenne in a large bowl. Stir in olives and sun-dried tomatoes. Crush together fennel seed, garlic and oregano with a rolling pin. Transfer to a medium bowl and whisk in eggs, oil, milk and sour cream. Stir mixture into dry ingredients just until combined. Spoon batter into prepared muffin cups, filling 3/4 full. Bake until golden brown, 20 to 25 minutes. Cool 5 minutes then turn out of pan. Serve warm.
Makes 12 muffins.
