Crust: 1 cup warm water(105 to 110 degrees) 1/4 tsp. active dry yeast 2 cups all purpose flour 3/4 cup cake flour 1 tsp. salt 1 1/2 tbsp. vegetable oil
Fruit Filling: 21 ounce can apple, cherry or blueberry pie filling
Crumb Topping: 1/2 cup all purpose flour 1/2 cup brown sugar 1/2 cup quick cooking oats 1/2 cup cold, diced butter 1 tsp. ground cinnamon
Vanilla Glaze: 2 cups sifted powdered sugar 3 tbsp. milk 1 tbsp. melted butter or margarine 1 tsp. vanilla extract
Directions
For Crust: Place warm water in a small bowl. Sprinkle yeast over water and let stand 5 minutes until foamy. Stir together both flours and salt in a large bowl. Stir in yeast mixture. Knead dough 10 minutes. Cover dough and let rise 12 hours in a warm area.
Preheat oven to 500 degrees. Coat a 16 inch pizza pan lightly with cooking spray. Roll out dough to a 16 inch round. Transfer dough to the prepared pizza pan. Roll over the edges of the dough to form the crust. Brush pizza all over with the vegetable oil. Prick all over with a fork. Bake 3 minutes. Spread pie filling over parbaked pizza.
For Crumb Topping: Combine flour, brown sugar, oats, diced butter and cinnamon in a medium bowl. Mix with a fork or pastry blender until crumbs form. Sprinkle crumbs evenly over pie filling.
Bake pizza 10 to 15 minutes until the crust is a light golden brown. Drizzle hot pizza with vanilla glaze.
For Vanilla Glaze: Stir together powdered sugar, milk, melted butter or margarine and vanilla in a medium bowl until smooth.
Makes one 16 inch pizza.
