Ingredients (view qty in metric system instead)
3/4 cup salted, roasted, shelled pistachios 1 to 1 1/2 pounds pork tenderloin 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. vegetable oil 1/2 cup heavy or whipping cream
Directions
Preheat oven to 350 degrees. Place pistachios in a food processor and blend until finely chopped. Season pork with salt and pepper. Place pistachios in a shallow baking dish. Roll the pork in the pistachios to coat, pressing lightly to adhere. Heat oil in a large skillet over medium high heat. Add pork and cook, turning frequently, until pistachios are lightly browned. Transfer pork to a roasting pan. Add the cream to the skillet and boil, stirring frequently, until thickened. Roast pork about 20 minutes until cooked through. Transfer pork to a cutting board and let stand 5 minutes before slicing and serving with pan sauce.
Serves 2 to 4.
