Ingredients (view qty in metric system instead)
2 cups all purpose flour 3/4 cup sugar 2 1/2 tsp. baking powder 1/2 tsp. salt 1 cup mashed banana 1/3 cup vegetable oil 1/3 cup milk 1 large egg, beaten to blend 3/4 cup shelled, chopped pistachios, divided
Directions
Preheat oven to 350 degrees. Grease the inside of a 9x5 inch loaf pan. Stir together flour, sugar, baking powder and salt in a large bowl. Add bananas, oil, milk, egg and 1/2 cup pistachios and stir until evenly moistened. Spread the batter evenly into the prepared pan. Sprinkle the remaining 1/4 cup pistachios over the top of the batter. Bake bread about 50 to 60 minutes until a toothpick comes out clean. Let bread cool 10 minutes in the pan. Remove the pan and cool bread completely on a rack.
Makes 1 loaf.
