Ingredients (view qty in metric system instead)
1 cup dried pinto beans, picked over 2 cloves garlic, minced 1 1/2 tsp. salt 1 tsp. pepper 2 cups soft fresh breadcrumbs 3 tbsp. chopped green onion vegetable oil for frying 2 large eggs 1 cup sifted all purpose flour
Directions
Place beans in a large bowl with water to cover. Soak overnight. Drain beans and transfer to a large saucepan. Add water to cover and heat to a boil. Reduce heat, cover and simmer until beans are tender, stirring occasionally, about 90 minutes. Drain beans and transfer to a food processor. Add garlic, salt and pepper. Process mixture until pureed. Transfer puree to a large bowl and mix in breadcrumbs and green onions. Heat a 1/2 inch of oil in a large skillet. Whisk together eggs to blend in a small bowl. Form heaping tablespoonfuls of bean mixture into ovals. Dip into eggs to coat then gently dredge in flour. Add fritters to oil and fry until crisp and dark golden brown, about 1 minute per side. Drain fritters on paper towels. Serve hot.
Makes about 2 1/2 to 3 dozen fritters.
