Ingredients (view qty in metric system instead)
Cake: 2 cups all purpose flour 1 3/4 cups sugar 2 tsp. baking soda 1/4 tsp. salt 20 ounce can crushed pineapple with juices 2 large eggs, beaten to blend
Frosting: 8 ounces cream cheese, room temperature 6 tbsp. butter, room temperature 1 1/2 cups powdered sugar, sifted 1 tsp. vanilla extract
Directions
For Cake: Preheat oven to 325 degrees. Butter and flour the inside of a 13x9 inch baking pan. Stir together flour, sugar, baking soda and salt in a large bowl. Blend in pineapple and eggs until batter is evenly moistened. Pour the batter into the prepared pan. Bake cake about 30 minutes until a toothpick comes out clean.
For Frosting: Combine cream cheese and butter in a medium bowl and beat until smooth. Beat in powdered sugar and vanilla until smooth. Spread the frosting evenly over the top of the warm cake. Transfer the pan to a rack and cool the cake completely. Cut cake into squares and serve.
Makes about 2 dozen pieces.
