Ingredients (view qty in metric system instead)
1/2 cup all purpose flour 5 tbsp. sugar, divided 3 tbsp. butter, room temperature 8 ounces cream cheese, softened 1 tsp. vanilla extract 1 large egg 8 ounce can crushed pineapple, drained
Directions
Preheat oven to 350 degrees. Grease the inside of a 9 inch square baking pan. Stir together flour, 2 tbsp. sugar and butter in a medium bowl until combined. Knead until a stiff dough forms. Press the dough evenly into the bottom of the prepared pan. Bake 12 to 15 minutes until lightly browned. Beat together cream cheese, vanilla, egg and remaining 3 tbsp. sugar in a medium bowl until smooth. Fold in half of the crushed pineapple. Pour the cream cheese mixture over the baked crust. Sprinkle the remaining pineapple evenly over the top. Bake about 25 minutes until set. Refrigerate 2 hours until well chilled. Cut into squares.
Makes about 1 dozen squares.
