Ingredients (view qty in metric system instead)
2 pounds medium shrimp, shelled and deveined 2 tsp. salt 1/4 cup crab boil spice 3/4 cup red wine vinegar 1 cup olive oil 1 tbsp. pickling spice 1 1/2 cups thinly sliced red onion 5 bay leaves 3 sprigs fresh thyme 3 lemons, thinly sliced
Directions
Boil shrimp in a large saucepan with salt, crab boil spicesand water to cover, 1 to 2 minutes, until just cooked through. Drain shrimp and place in a large bowl. Whisk together vinegar, oil, and pickling spice. Pour over shrimp and toss to coat. Stir in onion, bay leaves, thyme and sliced lemon. Refrigerate, covered, overnight. Serve lightly chilled.
Serves 6 to 8.
