Ingredients (view qty in metric system instead)
4 frozen, thawed phyllo dough sheets 3 tbsp. sugar 1/2 cup melted butter 6 tsp. dry breadcrumbs 2 to 3 cups fresh berries such as blueberries, blackberries and chopped strawberries 12 tbsp. prepared vanilla pudding
Directions
Preheat oven to 350 degrees. Place 1 phyllo sheet on a dry surface and brush completely with butter being careful not to tear phyllo. Sprinkle with 1 tbsp. sugar and 2 tsp. breadcrumbs. Top with a second sheet of phyllo and press gently to adhere. Brush all over with butter. Sprinkle with 1 tbsp. sugar and 2 tsp. breadcrumbs. Top with the third phyllo sheet, pressing to adhere. Brush all over with butter and sprinkle with remaining sugar and breadcrumbs. Top with fourth phyllo sheet and press to adhere. Brush all over with butter. Cut phyllo into 12 four inch squares. Brush muffin tins with melted butter. Press phyllo squares into tins, leave edges sticking up. Bake about 10 minutes until crisp and golden. Cool completely. Carefully remove phyllo baskets from muffin tins and store in an airtight container at room temperature until ready to serve.
To Serve: Fill baskets with berries and top each with a tablespoonful of pudding. Serve immediately.
Makes 12 baskets.
