Ingredients (view qty in metric system instead)
3/4 cup all purpose flour 1/4 tsp. garlic powder 1/4 tsp. salt 1/4 tsp. pepper 3 large eggs, beaten to blend 3 tbsp. water 1 tbsp. corn oil plus additional for frying 1 1/4 cups seasoned dry breadcrumbs 1/2 cup grated Parmesan cheese 12 pieces chicken(breasts, thighs, drumsticks, wings)
Directions
Preheat oven to 400 degrees. Line the inside of a large baking pan with foil. Stir together flour, garlic powder, salt and pepper in a large bowl. Whisk together eggs, water and 1 tbsp. corn oil in another bowl. Stir together the breadcrumbs and Parmesan in a third bowl. Dredge the chicken pieces in the flour mixture, shaking off excess. Dip chicken in the egg mixture ten roll in the breadcrumbs to coat. Pour corn oil into a large frying pan to a depth of 1/2 inch. Heat the oil over high heat. Add te coated chicken pieces in batches and fry 2 to 3 minutes per side until browned. Transfer the fried chicken to the prepared baking pan. Bake chicken about 30 to 35 minutes until juices run clear. Serve chicken immediately.
Serves 8.
