Ingredients (view qty in metric system instead)
3/4 cup all purpose flour 1/4 tsp. garlic powder 1/4 tsp. salt 1/4 tsp. pepper 3 large eggs, beaten to blend 3 tbsp. water 1 tbsp. corn oil 1 1/4 cup seasoned dry breadcrumbs 1/2 cup grated parmesan cheese two 2 1/2 pound chickens, cut into 6 pieces each corn oil for frying
Directions
Preheat oven to 400 degrees. Line a large baking pan with foil. Combine flour, garlic powder, salt and pepper in a medium bowl. Whisk together eegs, water and 1 tbsp. oil in a separate bowl. Mix breadcrumbs and parmesan in a third bowl. Pat chicken dry and dredge in flour. Dip in egg mixture then roll in breadcrumbs to coat. Heat oil in a large skillet. Add chicken and cook until browned, about 2 to 3 minutes per side. Transfer to prepared pan and bake about 30 minutes until chicken is cooked through and juices run clear.
Serves 6 to 8.
