Ingredients (view qty in metric system instead)
1 1/2 cups melted butter or margarine 3 cups sugar 1 tbsp. vanilla extract 5 large eggs 2 cups all purpose flour 1 cup unsweetened cocoa powder 1 tsp. baking powder 1 tsp. salt 24 small chocolate covered peppermint patties
Directions
Preheat oven to 350 degrees. Grease a 13x9 inch baking pan. Whisk together melted butter or margarine, sugar and vanilla in a large bowl. Add eggs and whisk until well blended. Sift together flour, cocoa powder, baking powder and salt in a medium bowl. Whisk dry ingredients into batter until well combined. Set aside 2 cups of the batter. Spread remaining batter over the bottom of the prepared pan. Arrange peppermint patties over batter in a single layer, spacing 1/2 inch apart. Spread reserved 2 cups batter over peppermint patties. Bake 50 to 55 minutes until brownies start to pull away from sides of pan. Transfer brownies to a rack and cool completely. Cut into squares.
Makes about 2 1/2 dozen brownies.
