Ingredients (view qty in metric system instead)
1/2 cup chopped toasted pecans 1/4 cup sugar 1 cup all purpose flour 1/8 tsp. baking soda 1/8 tsp. salt 1/2 cup cold butter, diced 1 tbsp. heavy or whipping cream 1 tsp. vanilla extract 18 to 20 pecan halves
Directions
Grind together chopped pecans and sugar in a food processor. Add flour, baking soda and salt. Pulse in butter until coarse crumbs form. Add cream and vanilla. Process until dough just forms. Gather dough into a ball and flatten to a disc. Roll dough out to about 1/4 inch thick on a floured surface. Cut out cookies with a 2 inch cookie cutter. Transfer cookies to a large baking sheet. Gather up dough scraps, reroll and recut. Press a pecan half into the center of each cookie. Refrigerate cookies 1 hour. Preheat oven to 325 degrees. Bake cookies about 20 minutes until lightly browned. Cool cookies on a rack.
Makes about 18 to 20 cookies.
