Ingredients (view qty in metric system instead)
Filling: 4 pounds bartlett pears, cored, peeled and sliced 1/3 inch thick 1 cup dark brown sugar 1/4 cup bourbon 2 1/2 tbsp. all purpose flour 1 tsp. fresh lemon juice 1/2 tsp. vanilla extract 2 tbsp. cold butter, diced
Topping: 2 cups all purpose flour 1/4 cup dark brown sugar 1 tbsp. baking powder 1/2 tsp. ground nutmeg 6 tbsp. butter, room temperature 3/4 cup half and half 6 tbsp. bourbon 1 tsp. vanilla extract
1 tbsp. sugar 1/4 tsp. ground nutmeg
Directions
For Filling: Preheat oven to 450 degrees. Combine pear slices, brown sugar, bourbon, flour, lemon juice and vanilla in a large bowl. Transfer filling to an 11x8 inch baking dish. Dot top with butter and bake about 15 minutes until heated through and bubbly. Prepare topping while pears are baking.
For Topping: Sift together flour, baking powder and nutmeg in a large bowl. Stir in brown sugar. Cut in butter until coarse crumbs form. Stir together half and half, bourbon and vanilla in a small bowl. Stir into flour mixture until just combined. Drop batter by tablespoonfuls over pears, completely covering top. Stir together 1 tbsp. sugar and 1/4 tsp. nutmeg. Sprinkle over topping. Bake 10 minutes. Reduce oven to 375 degrees. Bake until topping is firm and golden, about 20 minutes. Let cool at least 20 minutes before serving. Serve warm or at room temperature.
Serves 6 to 8.
