Ingredients (view qty in metric system instead)
Filling: 3 pounds ripe pears, cored, peeled and chopped 1/4 cup sugar 2 tbsp. all purpose flour 1 tsp. vanilla extract 1 cup frozen raspberries, not thawed
Biscuit Topping: 1 1/2 cups all purpose flour 2 tbsp. sugar 1 1/2 tsp. baking powder 3/4 tsp. baking soda 1/4 tsp. salt 5 tbsp. cold butter, diced 1/3 cup buttermilk 1/2 cup heavy or whipping cream 1/2 tsp. vanilla extract sugar for sprinkling
Directions
For Filling: Preheat oven to 375 degrees. Combine pears, sugar, flour and vanilla in a large bowl. Toss to coat. Transfer half of pear mixture to an 8x8 inch baking dish. Sprinkle frozen berries over pears. Spoon remaining pear mixture over berries. Cover dish with foil. Bake about 35 minutes until filling is bubbly. Meanwhile, prepare topping.
For Topping: Combine flour, sugar, baking powder, baking soda and salt in a large bowl. Add butter and cut in until coarse meal forms. Whisk together buttermilk, cream and vanilla in a medium bowl. Stir into flour mixture until a sticky dough forms. Drop heaping tablespoonfuls of dough onto top of hot filling. Sprinkle sugar over. Bake about 25 minutes until topping is golden. Serve with ice cream if desired.
Serves 6.
