Ingredients (view qty in metric system instead)
3 cups all purpose flour 2 1/2 tbsp. baking powder 1/4 tsp. salt 1/4 tsp. ground nutmeg 6 tbsp. butter, room temperature 1/4 cup plus 1/3 cup chopped lightly-salted dry-roasted peanuts 3/4 cup plus 3 tbsp. heavy or whipping cream 3/4 cup mashed ripe banana 2 tbsp. honey
Directions
Preheat oven to 400 degrees. Combine flour, baking powder, salt and nutmeg in a large bowl. Cut in butter until a coarse meal forms. Add 1/4 cup peanuts, 3/4 cup cream and banana and stir until a dough starts to form, add some additional cream if mixture is too dry. Knead dough by hand until smooth. Roll out to 3/4 inches thick on a floured surface. Cut into rounds with a biscuit cutter or floured glass. Place biscuits on a sheet pan. Gather up scraps. Roll and cut additional biscuits and transfer to pan. Stir together honey and 3 tbsp. cream in a small bowl. Brush over biscuits. Sprinkle with remaining 1/3 cup peanuts. Bake about 20 minutes until a toothpick comes out clean. Serve warm.
Makes about 12 biscuits.
