Ingredients (view qty in metric system instead)
1 cup unsalted dry-roasted peanuts 1/2 cup butter, softened 3/4 cup sugar 1 large egg, beaten to blend 3/4 cup all purpose flour 1 tsp. baking powder 2 ounces bittersweet chocolate, melted and cooled
Directions
Preheat oven to 375 degrees. Finely grind peanuts in a food processor. Beat together butter and sugar in a large bowl until fluffy. Beat in egg. Stir in the ground peanuts, flour and baking powder just until combined. Drop heaping teaspoonfuls of batter 2 inches apart on ungreased baking sheets. Bake about 8 minutes until golden brown. Cool cookies on pan 2 minutes. Transfer cookies to a rack and cool completely. Drizzle the melted chocolate over cooled cookies. Refrigerate in an airtight container.
Makes about 4 dozen cookies.
