Ingredients (view qty in metric system instead)
Muffins: 2 cups all purpose flour 1/2 cup sugar 3 tsp. baking powder 1/2 tsp. salt 1/2 cup chunky peanut butter 2 tbsp. butter or margarine 1 cup milk 2 large eggs, beaten to blend
Topping: 1/2 cup sugar 1 tsp. ground cinnamon 3 tbsp. melted butter
Directions
For Muffins: Preheat oven to 400 degrees. Grease 18 muffin cups or line with cupcake papers. Stir together flour, sugar, baking powder and salt in a large bowl. Cut in peanut butter and butter until coarse crumbs form. Stir in the beaten eggs until batter is moistened. Fill prepared muffin cups 2/3 full with batter. Bake muffins 15 to 17 minutes until a toothpick comes out clean.
For Topping: Stir together sugar and cinnamon in a small bowl. Brush tops of the warm muffins with melted butter. Dip tops of muffins into the sugar cinnamon mixture to coat.
Serve muffins warm.
Makes about 15 to 18 muffins.
