Ingredients (view qty in metric system instead)
3/4 cup creamy peanut butter 1/2 cup solid shortening 1 1/4 cups packed brown sugar 3 Tbsp milk 1 Tbsp vanilla 1 large egg 1 3/4 cup all purpose flour 3/4 tsp salt 3/4 tsp baking soda
Directions
Preheat oven to 375 degrees. Combine peanut butter, shortening, brown sugar, milk and vanilla. Beat at medium speed until well mixed. Beat in egg, just until blended. Sift together flour, salt and baking soda. Beat into peanut butter mixture at low speed. Drop by heaping teasponfuls two inches apart on an ungreased baking sheet. Flatten with fork, makin criss-cross pattern. Bake 7-8 minutes, or until set and just starting to brown. Cool two minutes on baking sheet and remove to foil to finish cooling.
Makes approximately 3 dozen cookies.
