Ingredients (view qty in metric system instead)
3 cups all purpose flour 2 1/2 tbsp. baking powder 1/2 tsp. salt 1/4 tsp. ground nutmeg 6 tbsp. butter, room temperature 1/4 cup plus 1/3 cup chopped dry roasted peanuts 3/4 cup plus 3 tbsp. heavy whipping cream 3/4 cup peeled, mashed banana 2 tbsp. honey
Directions
Preheat oven to 400 degrees. Combine flour, baking powder, salt and nutmeg in a large bowl. Cut in butter until coarse crumbs form. Stir in 1/4 cup peanuts, 3/4 cup cream and mashed banana. Stir until a dough forms, adding more cream if too dry. Turn the dough out onto a floured surface and knead about 2 minutes until smooth. Roll out dough to 3/4 inch thick. Cut dough into 2 1/2 to 3 inch rounds using a floured biscuit cutter. Transfer the rounds to a large sheet pan. Reroll and cut remaining dough scraps. Stir together honey and 3 tbsp. cream in a small bowl. Brush the honey mixture over the top of the biscuits and sprinkle with 1/3 cup peanuts. Bake biscuits about 20 minutes until a toothpick comes out clean. Serve biscuits warm.
Makes about 12 to 16 biscuits.
