Ingredients (view qty in metric system instead)
Topping: 1/2 cup sugar 3 tbsp. water 1 cup toasted sliced almonds 1/2 cup all purpose flour 5 tbsp. cold butter, diced
Peaches: 1/2 cup sugar 3 tbsp. water 6 large ripe peaches, peeled, pitted and wedged 2 tbsp. cornstarch
Directions
For topping: Butter small sheet pan. Bring sugar and water to boil in a saucepan. Boil until deep golden brown. Stir in almonds. Immediately pour onto sheet pan. Let cool. Break into 2 inch pieces. Grind finely. Combine 1/2 cup ground almond mixture with flour. Cut in butter until crumbly. Reserve.
For peaches: Bring sugar and water to boil. Boil until deep golden brown and pour into a 9x9 baking pan to coat bottom. Let stand until caramel is hard. Preheat oven to 375 degrees. Toss together peaches with cornstarch and layer on top of hardened caramel in pan. Sprinkle topping over. Bake until bubbly and top is browned, about 40 minutes. Cool to lukewarm. Serve with vanilla ice cream.
Serves 4 to 6.
