Ingredients (view qty in metric system instead)
Filling: 6 ripe peaches, peeled, pitted and sliced 3 plums, peeled, pitted and sliced 2/3 cup sugar 3 tbsp. all purpose flour
Topping: 3/4 cup plus 2 tbsp. all purpose flour 1 tsp. baking powder 1/4 tsp. salt 1 tbsp. sugar 1 tsp. finely grated lemon peel 5 tbsp. cold butter, diced 6 tbsp. heavy or whipping cream 3 tbsp. brown sugar 1/2 tsp. ground cinnamon 1/4 tsp. ground ginger pinch ground cloves
Directions
For Filling: Preheat oven to 400 degrees. Toss together peaches, plums, sugar and flour in a large bowl. Transfer filling to an 8 inch square baking dish. Bake about 45 minutes until fruit is tender and bubbly. Transfer pan to a rack and cool 10 minutes.
For Topping: Stir together 3/4 cup flour, baking powder, salt, sugar and lemon peel in a medium bowl. Cut in 3 tbsp. butter until coarse crumbs form. Stir in cream until moist clumps form. Gather up dough into a bowl. Transfer to a floured surface and pat out dough to a 6 inch square. Cut dough into 4 squares. Place squares on top of hot fruit. Stir together brown sugar, cinnamon, ginger, cloves and remaining 2 tbsp. flour in a small bowl. Cut in remaining 2 tbsp. butter until clumpy. Sprinkle brown sugar mixture over dough. Bake cobbler about 25 to 30 minutes until topping is golden. Cool 30 minutes before serving.
Serves 4 to 6.
