Ingredients   (view qty in metric system instead)
4 large eggs
2 1/2 cups sugar
5 cups milk
1/2 tbsp. vanilla extract
1 cup raisins
1/2 tbsp. grated nutmeg
3 cups cooked white rice
two 12 ounce cans fruit cocktail, drained

Directions
Preheat oven to 300 degrees. Beat eggs in a large bowl until foamy. Add sugar, milk, vanilla, raisins, nutmeg and rice and mix well. Pour rice pudding mixture into a 13x9 inch baking pan. Bake about 1 1/2 to 2 hours until a toothpick comes out clean. Slice rice pudding in a diamond pattern and transfer to plates. Serve with a spoonful of fruit cocktail on the side.

Makes about 12 portions.
