Ingredients (view qty in metric system instead)
1/4 cup olive oil 4 pounds large shrimp, peeled and deveined 1 pound red onions, peeled and cut into thin wedges 12 ounces stemmed, seeded and diced fresh jalapeno peppers 1/4 cup peeled, minced fresh ginger root 2 tbsp. peeled, minced fresh garlic 1 pound pitted ripe olives, halved 1 cup orange juice 1 tbsp. curry powder 3/4 tsp. salt 1 tsp. crushed red pepper flakes 1/4 cup unsalted butter 2 pounds orange segments
Directions
Heat oil in a large skillet over medium heat. Add shrimp and cook 2 minutes, stirring frequently. Add red onion wedges, jalapenos, ginger and garlic. Simmer 2 to 3 minutes, stirring occasionally. Add olives, orange juice, curry powder, salt and crushed red pepper flakes and heat to a boil. Reduce heat and simmer 2 to 3 minutes. Remove pan from the heat and stir in butter and orange segments. Serve immediately.
Serves 12.
