Ingredients (view qty in metric system instead)
2 packages active dry yeast 1/2 cup warm water(110 to 115 degrees) 1 cup warm milk(110 to 115 degrees) 1/2 cup plus 1/4 cup grated Parmesan cheese 1/3 cup plus 1/4 cup melted butter 3 tbsp. sugar 1 tsp. salt 1 cup yellow cornmeal 2 large eggs 4 1/2 to 5 cups all purpose flour
Directions
Combine yeast and water in a large bowl. Let stand about 5 minutes until yeast is foamy. Stir in milk, 1/2 cup Parmesan, 1/3 cup melted butter, sugar, salt, cornmeal and eggs until well blended. Add 3 cups flour and mix until smooth. Add enough remaining flour to form a soft dough. Turn out onto a floured surface and knead 6 to 8 minutes until smooth and elastic. Place dough into a large greased bowl and turn to coat. Cover and let rise in a warm place about 1 hour until doubled. Punch down dough. Shape dough into 24 ovals. Stir together 1/4 cup Parmesan and 1/4 cup melted butter in a small bowl. Dip rolls into butter mixture to coat. Place rolls on greased sheet pans. Cover and let rise in a warm place about 30 minutes until doubled. Meanwhile, preheat oven to 375 degrees. Bake rolls 20 to 25 minutes until golden brown. Cool rolls on racks.
Makes 2 dozen rolls.
