Ingredients (view qty in metric system instead)
2 large egg whites 1 cup grated parmesan cheese pinch cayenne pepper vegetable oil for frying
Directions
Put whites in a bowl and let stand 15 minutes at room temperature. Beat to stiff peaks. Fold in parmesan and cayenne. Roll into about 20 balls. Heat oil to 375 degrees. Fry balls, in batches, until golden about 2 minutes. Drain on paper towels. Serve warm.
Makes about 20 puffs.
