1 pound boneless, skinless salmon fillet, chopped 1/4 cup chopped fresh cilantro leaves 2 tbsp. hoisin sauce, plus additional for serving 2 tbsp. mayonnaise 1/4 cup chopped green onion 2 tsp. peeled, minced fresh ginger 1 medium clove garlic, peeled and minced 3/4 tsp. salt 1/2 tsp. pepper 2 tbsp. vegetable oil 4 hamburger buns, split and toasted lettuce leaves tomato slices
Directions
Combine salmon chunks, cilantro, 2 tbsp. hoisin sauce and mayonnaise in a food processor. Pulse until salmon is coarsely ground. Transfer salmon mixture to a large bowl. Add green onions, ginger, garlic, salt and pepper and stir until well blended. Form the salmon mixture into 4 patties. Transfer patties to a plate, cover and refrigerate at least 1 hour.
Heat oil in a large skillet over medium heat. Add salmon patties and cook about 3 minutes per side until cooked through. Spread the cut sides of hamburger buns with hoisin sauce. Place salmon burgers on the buns and top with lettuce leaves and tomato slices. Serve burgers immediately.
Makes 4 burgers.
