Ingredients (view qty in metric system instead)
1/2 cup cornmeal 1/2 cup all purpose flour 1 tbsp. grated lemon peel 1/2 tsp. cayenne pepper 1/2 tsp. salt 2/3 cup buttermilk 4 catfish fillets, 6 ounces each 2 tbsp. butter 1 tbsp. vegetable oil 1 tbsp. minced fresh parsley
Directions
Stir together cornmeal, flour, lemon peel, cayenne and salt in a medium bowl. Pour buttermilk into another bowl. Dip catfish into buttermilk then dredge in cornmeal, coating completely. Melt butter with oil in a skillet. Add catfish and cook until crust is golden brown and fish is cooked through, about 4 minutes per side. Drain on paper towels and sprinkle with parsley. Garnish with lemon wedges.
Serves 4.
