3 pounds catfish fillets 1/2 cup all purpose flour 1 tsp. salt 1/2 tsp. coarsely ground black pepper 2 large eggs 1 tbsp. water 1 cup white cornmeal vegetable oil for frying
Directions
Rinse catfish fillets in cold water and pat dry with paper towels. Stir together flour, salt and pepper in a pie plate. Whisk together eggs and water in a medium bowl. Spread cornmeal on a large plate. Heat 1/4 inch of oil to 350 degrees in a large skillet. While oil is heating, Dredge the catfish fillets in the flour, shaking off excess. Dip fish in egg mixture then roll in cornmeal until catfish is well coated, pressing to adhere. Add fish to the hot oil and cook about 2 to 3 minutes per side until catfish is cooked through and coating is crisp and golden. Drain catfish fillets on paper towels and serve.
Serves 6.
