Ingredients   (view qty in metric system instead)
1 pound new potatoes, sliced 1/8 inch thick
2 tbsp. olive oil
1/2 tsp. salt, divided

Directions
Preheat oven to 500 degrees. Rinse the sliced potatoes under cold running water and drain well in a colander. Pat slices dry on paper towels. Toss the potato slices with oil and 1/4 tsp. salt. Spread potato slices in a single layer on a baking sheet. Toast on the top rack of the oven 20 to 26 minutes, rotating pan occasionally, until golden brown- potatoes will bake unevenly. Drain on paper towels and sprinkle with remaining 1/4 tsp. salt. Serve warm.

Makes about 4 servings.
