Ingredients (view qty in metric system instead)
1 1/2 tsp. salt 1 tsp. ground cumin 1 tsp. paprika 1/2 tsp. pepper 1/2 tsp. ground cinnamon 1/4 tsp. ground cloves 3 1/2 pounds country-style pork ribs 4 cups root beer 1/3 cup prepared barbecue sauce 2 tbsp. canned tomato paste 1 tbsp. white vinegar 2 tsp. Dijon mustard 1 tsp. worcestershire sauce
Directions
Preheat oven to 350 degrees. Stir together salt, cumin, paprika, pepper, cinnamon and cloves in a small bowl. Rub spice mixture all over ribs. Place ribs bone-side up in a shallow roasting pan. Cover and bake 75 minutes. Meanwhile, heat root beer to a boil in a small saucepan. Boil 20 to 25 minutes until reduced to 1 1/4 cups. Remove pan from heat and stir in barbecue sauce, tomato paste, vinegar, mustard and worcestershire. Boil mixture 1 minute. Remove from heat. Drain fat from ribs and turn meat-side up. Spoon half of sauce over ribs. Bake 45 minutes, basting twice with remaining sauce.
Serves 4.
