Ingredients (view qty in metric system instead)
3 soft white bread slices, cubed 3 tbsp. chopped fresh cilantro 2 tbsp. yellow cornmeal 2 large cloves garlic, chopped 1 1/2 tsp. ground cumin 1/2 tsp. crumbled dried oregano 1/2 tsp. salt 1/4 tsp. cayenne pepper pinch ground cloves 2 tsp. beaten egg white 2 tbsp. Dijon mustard 1 tbsp. water 2 tsp. honey 4 chicken thighs 4 chicken drumsticks
Directions
Preheat oven to 400 degrees. Grease a large sheet pan. Combine bread cubes, cilantro, cornmeal, garlic, cumin, oregano, salt, cayenne and cloves in a food processor. Process until finely chopped. Add egg white and blend until evenly moistened. Transfer mixture to a shallow pie pan. Stir together Dijon, water and honey in a small bowl. Brush honey mixture over chicken pieces. Dredge chicken in crumb mixture to thinly coat. Press crumbs lightly to adhere. Place coated chicken pieces on prepared pan. Bake chicken about 40 minutes until crisp and browned.
Serves 4 to 6.
