Ingredients (view qty in metric system instead)
8 slices bacon 8 bone in, skinless chicken thighs 1/2 cup yellow cornmeal 1 tsp. salt 1 tsp. pepper 1 tsp. paprika
Directions
Preheat oven to 350 degrees. Microwave bacon slices 30 seconds to 1 minute on High power until limp. Wrap one bacon slice around each chicken thigh. Stir together cornmeal, salt, pepper and paprika in a pie plate. Coat chicken with cornmeal mixture and place on an oiled rack. Place the rack in a foil lined baking pan. Coat chicken with cooking spray and bake 30 minutes. Turn chicken over and bake an additional 20 to 30 minutes until chicken is cooked through. Serve immediately.
Serves 6 to 8.
